Recipe: This sweet potato, black bean and kale skillet recipe came from my healthy-eating muse, Gwenyth Paltrow. I substituted spinach for kale and put it over a whole grain tortilla with avocado and cilantro. I would definitely make this again!

-The Forty Days of Dating blog (shout-out to Elizabeth for showing this to me). Don’t start reading it because you won’t be able to stop. The basic story is two artists who have been friends for a while and decide to experiment with dating each other for forty days since their other relationships always fail. It’s a fascinating day by day view into how each partner views situations differently, analyzes the other’s actions and every day proves how important good communication is. They did the experiment back in March and have been posting the recaps each day this summer. It’s almost over and I can’t wait to see how it turns out! (And the graphic design is incredible so at least look for that)
