5 Things to Cook This Week

With the territory of a house comes the responsibility of cooking your own meals. Today I thought I’d just share some of my favorite things I’ve cooked recently. Not too exciting, but it’s hard to plan a menu for the week and I hope you can get some ideas!

Disclaimer: you’re going to see a lot of Gwenyth Paltrow in here… I promise her recipes are delicious!!!

1. Chicken Gyro Salad


The marinade for the chicken is just right and I could eat the tzatziki dressing by the spoonful.

2. Sweet Potato Black Bean Kale Skillet


The flavors in this make me so happy, y’all. It’s incredibly filling and warm, yet still has awesome spice and is so healthy! I have now made it with both spinach and kale, so use whatever you have on hand. And it’s truly perfect on a whole wheat tortilla with cilantro, avocado and lime juice.

3. Healthy Banana Walnut Muffins


These were so incredibly easy to make, they had no white sugar, and they’re a perfect way to use up browned bananas. The muffins wound up moist and puffy; perfect for breakfast on the go! I did a mixture of banana and walnuts, but I’d add dark chocolate chips if you prefer sweeter things.

4. Minty Cucumber-Quinoa Salad

Hands down, this is my favorite quinoa recipe!! It has just the right sweetness and crunch, and it tastes just as good the next day or two for lunch.

5. Turkey Burgers with Roasted Pepper and Avocado Salsa

These were the first meal we cooked in our house & they were a huge hit with my roommates! For the salsa I didn’t have roasted peppers so I used fresh bell peppers and it was still delicious. The burgers were juicy, cooked easily without falling apart and the salsa was fresh and flavorful. I think I might make them again this week…

All of these recipes are incredibly easy and (for the most part) fast, making them perfect for weeknight dinners. I halved most to feed just me, so adjust them to your needs.
